In my last blog, I shared several vegetarian recipes I've enjoyed.

- Eggplant parmesan burgers

- Cauliflower crust pizza
- Vegetable soup
- Panera copycat vegetable soup with pesto (I have since tried this, and it is very good but I would make some alterations. For one thing, it did not have enough broth, so I added 3 cans (6 cups) instead of 4 cups of vegetable broth. I also feel it's a bit heavy on green beans, and carrots would be a good addition. I'd probably do half the beans and then add carrots.)
- Salt & Vinegar Zucchini chips
- Vegetable and rice casserole
- Spinach & artichoke quinoa casserole
- Braided spaghetti bread (I did try this one...it isn't really very healthy but it is YUM.)
- Cauliflower breadsticks (**Have since tried this. They were good, but I was hoping for more of a, "Wow! I wouldn't even know this wasn't real bread!" You can tell it's not bread. Also, the recipe calls for 4 eggs, I'd try with 3, maybe even 2...they were a little runny.)
- Carrot soup (my co-worker made this and I tried a bite, it is so good! Hoping I can make it as good.)
- Vegetarian pesto wraps (I have since tried these, they are quite good.)
- Mashed cauliflower au gratin
- Banana ice cream (Bananas are the only ingredient! Really curious to see if this works.)
